Each stage is appropriate for different applications. Soft peaks are used for folding into batters (chiffon cakes, soufflés). Medium peaks are suitable for some piped applications. Stiff peaks are required for meringue kisses, pavlovas and any application where the meringue must hold a precise shape.

Over-Whipping

Beyond stiff peaks lies over-whipping — a state where the protein films around the bubbles have been stretched and stressed to the point of failure. Over-whipped meringue looks dry, lumpy and grainy. It loses its gloss and becomes difficult to pipe smoothly.

Meringue mix formulations are generally more tolerant of extended whipping than plain egg white, because their stabilising components help maintain the protein film integrity for longer. However, over-whipping is still possible and should be avoided.

The Impact of Sugar Timing

Adding sugar during whipping changes the foam's properties. Sugar dissolves into the water phase, increasing viscosity and slowing drainage. This makes the foam more stable but also denser. Adding sugar too early can inhibit volume development; adding it too late can result in a grainy, poorly dissolved meringue.

The standard approach — beginning sugar addition at the soft-peak stage and adding gradually — balances volume development with stability, producing a smooth, glossy meringue at full volume.
