The emulsifying power of egg yolk comes primarily from two classes of molecules: phospholipids (principally lecithin) and lipoproteins (principally low-density lipoproteins, or LDL). Both are amphiphilic — meaning they have one end that attracts water and another that attracts fat.

When egg yolk is mixed with oil and water, these molecules migrate to the oil-water interface and arrange themselves around tiny oil droplets, forming a protective coating. This coating prevents the oil droplets from merging with each other, maintaining the fine dispersion that characterises a stable emulsion.

Factors Affecting Emulsion Stability

Several factors influence the stability of yolk-based emulsions. The ratio of oil to emulsifier determines how much oil can be stabilised in the emulsion. The rate of oil addition during emulsion formation affects droplet size — slow addition with vigorous mixing produces finer droplets and more stable emulsions.

Temperature also plays a role. Moderate warmth can improve yolk protein flexibility and emulsification efficiency, but excessive heat can denature the proteins and cause the emulsion to break. pH affects the charge on emulsifier molecules, which influences their behaviour at the interface.

Egg yolk powder retains the emulsifying components of fresh yolk through the spray-drying process. The lecithin and lipoproteins remain functional and can form stable emulsions when the powder is reconstituted and used in formulation.
